A classic Gentil d'Alsace blend of Pinot Blanc (50%), Pinot Gris (25%) and Gewurztraminer (25%) which are biodynamically farmed on the sandy limestone soils of the valley below the village of Katzenthal. The fruit co-vinified, with gentle pressing followed by fermentation in cask by native yeasts.Food Pairing
